I love chili, but it has to be really thick. I make it with beans, ground beef, tomato, and chopped red bell peppers, onions, celery, etc. Topped with cheddar cheese and sometimes sour cream. I never liked Wendy's chili, too watery, and I hate watery chili, yuck!
I really liked Hormel's White Chicken Chili over rice, but my local grocery store stopped carrying it.

Based on this thread I went out earlier and got chili ingredients and made some, meaty and beany. Just some simple crackers this time. I got a lot left over for several meals this week. Thanks Chris for starting this one. With the sudden weather change this came at the right time.

I'm Glad you guys liked the chili.. thanks Scott. Yeah chili is great on a cold winter day. Sitting around watching football or just taking it easy. We are going to make some tomorrow and get this party started.

Living in Ohio, chili season for me starts in October. I'll probably cook something up for next weekend.
Heh, that reminds me of back when I was growing up. My parents had 5 kids, so when my mother made chili, she made a big ol' pot of it. And of course, it was always too big to fit in the fridge... so, it would sit out in the back porch. We could only make it in winter. After a couple days of sitting out there gave time for the flavors to mingle. You just scraped off the thin layer of ice on the top, heated it up... was the best.
I like it thick and chunky with whatever in it. I like it spicy but not eye-watering hot. I generally eat chili kind of like nachos, pouring over a bed of tortilla chips or Fritoes with a lot of shredded cheese on top and sometimes onions and a dollop of sour cream. If the chili is bland, I'll add a few jalapenos.
Not a big on eating chili on hot dogs. I'd rather have them separate.
But for homemade, I use ground hamburger, tomato paste, red or pink beans, and my spice mixture.
Equal parts curry, chili powder, black pepper, garlic and onion powder, and a smidgeon of salt to taste.
Brown the beef first, drain out the grease, add the tomato paste, a bit of water, the beans and let cook until thick. Add the spice mixture to taste, as well as the salt.
Not too spicy, but not too mild either. Great stuff.
