Who likes hot sauce?

    Can't stand the stuff.

    I used to suck my thumb when I was little, and my mother once put hot sauce on my thumb to make me stop.

    Not only did it burn my tongue, it also burned my thumb!!!

    Even after washing my hands I could still taste the stuff. Brushing my teeth didn't work either.

    Needless to say, I gave up my thumb.

    I also developed a serious aversion to hot sauce.

    Not spicy stuff in general, just hot sauce.

    I put together this little mix of dry spices to heat up canned chili.

    Equal parts black pepper, chili and curry powder; shake well, and keep in an airtight jar.

    It has this slightly smoky and sweet aroma to it, and the heat isn't all that bad.

    I add it to soup, stew, chili, plain old red, pink or white beans. It's also pretty good on plain roasted chicken.

    When it comes to spicy food, I like a small amount of fire on my tongue; not a conflagration in my mouth.

        Wayne...we are indeed brothers from different mothers...


        Here's my humble little stash (those are mole pastes in the back)...






        I absolutely love hot sauce on everything, lol.

        It enhances food...no question about it.

        Having said that...I don't like extreme hellish-type fiery burning hot sauces...too hot...and like Mike said...you don't taste the food anymore...it becomes more of a bragging right.

        Making your own out of dried roasted chiles purees (which can be made into a powder as well) is awesome too...like California chile, Ancho chile, New Mexico chile, Guajillo chile, Pasilla chile, Chipotle chile, etc... These are not hellfire hot...they are food enhancers...but if you wish to make it really hot...you can certainly make a sauce from dried chile de Arbol...that one will make you sweat, lol.

        Some sample of what I'm talking about...this stuff is really Mexican...






        Easy to make...you roast them over fire or you boil them...add some salt, pepper, garlic, dry oregano, bay leaves...another cool option is a tad of powdered chicken stock...water half way the pot.

        Let it rest and cool down...then on blender...place all ingredients...add a touch of love oil...and let is blend at high speed.

        Pour sauce puree on colander to remove excess fiber, pulp, seeds, etc...into a bowl...and presto...delicious authentic Mexican sauce...it will look like spaghetti sauce...



        You put that in tacos, eggs, burritos, tortas, tostadas, enchiladas, or anything you can think of...delicious.

        Here...I recently made some mole enchiladas and used that homemade sauce as well...



        Might look like a mess...but it's heavenly...





        Oh yeah...back to the bottled hot sauces...

        Like I said...I don't like hellish-type fiery burning hot stuff...I buy different brands...but my personal everyday favorite is Cholula...the heat is not overwhelming...no vinegar aftertaste...and it just rules on everything...I just had this plate this past weekend...eggs over easy with Cholula on top...a couple of buttermilk pancakes with blueberry topping...and a sautee beef hot dog sliced in half...



        Another breakfast done a few weeks ago...eggs over easy on top of toasted buttered French bread...with Cholua on top of course...






        Cholula...




        ...and yes...I use it in beer too...Micheladas, with salt & pepper, baby...







        P.S. Anybody tried Sabritones with hot sauce?




        Fantastic with beer!

          YUM!!!! Hector that's what i pretty much do with my homemade sauce go to my local Mexican market and get their fresh stuff pretty much do the same but i remove the seeds first. and Yes I want an enhancer for my food not fire coming out of my azz....

          Cholula Mmmmm my fav!!!

            You don't need to remove the seeds as long as you use a colander...

            Yeah, Cholula is so yummy...it goes with EVERYTHING!!!!!!!!!!!!!!

                      Indeed you are right my friend...Cholula is absolutely my favorite as well...it's flavorful without the extreme heat of other hot sauces...it simply rules.

                            I like Cholua. I eat it and El Yucatcheto at our local Mexican resaurant, Don Senor. Great place.

                            At home I usually just keep Frank's Red Hot or Texas Pete Buffalo sauce around. I don't know why I don't keep the hotter stuff handy. I save that for restaurant visits for some reason.

                            I never have much cared for Tabasco sauce. I don't like the taste.

                            As a rule, I like hot sauce, but not ones that are so hot they have no taste and scar your taste buds. I can hang with them, and I've done it. But I don't care for them.
