    Last day at the hospital and the cafeteria had a great meal for $8:

    They called it Asian pork chop & wild rice with squash & cabbage. Bonus they included a cornbread muffin so we are going to use that with a bowl of veggie chilli tonight.

    Took Dad back to hospital today so while we were there we picked up shrimp etouffee with white rice and Mediterranean veggies. It was a surprise and very good.

    Fajitas salad.

    Grilled three colors of pepper with onion & chicken tenders. Add in lettuce, refried beans, rice, pico del gallo with mango, cheese and made quesadilla.

    Cooked for 4 and still have enough to make chicken noodle soup tomorrow. All under $35.

    I love cooking at home and since I was a cook in the Navy it does come in handy.

    Today's dinner is vegetable soup, but to my parents it's beef vegetable soup. I put in the Gardein plant-based ground be'f with mixed veggies and a can of fire roasted tomatoes.

    Today I took a twist on baked potatoes. I used a glass baking pan, buttered it. Then cut up several potatoes and onions, used chopped up rotisserie chicken and BBQ sauce. Then added cheese.

    There was nothing left.

    My brother and I enjoyed a Chinese buffet yesterday, a little pricey...but satisfying. Braised pork was super tender and fatty , and the teriyaki chicken went well with a bit of white rice. Hell...I'd eat there everyday, but I'd end up broke and 600 pounds overweight..LOL

    Palitoy: I love homemade chili, used to make it myself. Something so simple but everybody's is different.

    B-Lister: Japan has so many delicious foods to try. Don't forget to try the local food shops. They my not look like much but that was a where I usually find the best tasting food at an affordable price verses the names stores.

    Today I cooked an old family meal we haven't had in over a year. Tomato pork chops with potatoes and carrots (seasoned with sea salt, pepper and garlic). I cooked the green beans separate but I always put them together. It was good but I forgot the celery so the flavor was just a little off. PXL_20240417_194926440.jpg

    Last night I arrived in Japan for my vacation. After some shopping we (my sibling and I) Decided on Yoshinoya. I had Gyudon and Karaage, and my sibling had Curry.

    Today for to fam I made chicken fried steak with homemade mashed potatoes & gravy with collards and biscuits.

    Again my bf gives me that look of "where is the rice?". I told him our meals have changed now that I have to cook for family. It means he only gets to eat rice 2 out 3 meals a day.

    I'm struggling with the banana omelette...I just can't taste the banana and eggs working together. I can totally see banana crepes - that would be delish. But banana omelette...the yolk is stopping me. Maybe an egg white omelette, or really, how about a plantain egg white omelette? Fry up the plantains and caramelize some sugar...maybe some nutmeg and a little salt...I dunno.

    We just came from the Blue Jackets game, where I had coffee & Timbits. We got Chipotle on the way home and made it in time to see Jeff Rimmer signing off of his last game in the broadcast booth. Good stuff - he's a class act.

    I am back cooking for four. If I do not cooking at least one meal for my parents they eat junk food ( they say it's easier).

    Dinner I fixed hamburger steak, mashed potatoes and peas with a side salad. PXL_20240414_180842646.jpg

    It amazes me, growing up we had a big garden. Now that my parents have retired and after the hospital visit, they eat more junk food than real food unless I cook it for them. I now have a big garden so the roles are now reversed.
