I agree. I feel there wasn't much in the way of personality for the characters in the prequels.
There was a great point made in that critique on YouTube. People were asked to describe the main characters without using anything physical or visual. With the original, it's easy to do with Han, Luke, Leia, even R2 and Chewie. With the prequels, it's very difficult because there's nothing there to work with.
