"Annoying"? Perhaps to you.
But to most folks here in the US who attend screenings of these genre films, these types of reactions are a big part of the enjoyment.
We Americans will not just react to the "smallest thing" as you said. That is a gross over-simplification.
In the case of STAR TREK, what we reacted to were the pop culture references that these characters represented. Each Enterprise character had an "introduction" moment which allowed long-time fans and brand new fans to enjoy these characters portrayed by new actors.
We will also react to lines of dialogue (with laughter of approval or cheers) that have a classic connotation (Ie: 'I'm gonna make him an offer he can't refuse." "May The Force Be With You" "You're gonna need a bigger boat". "Go ahead... Make my Day". "My name is Bond... James Bond". "Say hello to my little friend!" etc.)
It's a shame that people cheering and clapping and having a good time over these types of things is so "stupid" to you. There's NOTHING like the communal spirit of a couple of hundred strangers having a good time together over a fun event-movie.
Perhaps it is an "American" thing. Virtually all of the examples of pop culture I provided are of American origin and incredibly popular and successful. That is a big part of our reaction too.
