Mike, you gotta take at least one cooking class in your life, I'd go crazy if I had to eat frozen or canned food at home all the time, the hell with that, lol.

Making fried chicken is not rocket science, it's really easy, you just have to gather all the right ingredients.

BTW, I cook with olive oil all the time, but for fried chicken, nothing beats peanut oil, lol.

For artery clogging fried chicken, Louisiana double dipped buttermilk fried chicken cooked in lard is the best, the crispiest and juiciest fried chicken you'll ever have, the problem, is after you have a few pieces, you'll need to go to the emergency room to treat your cardiac arrest, lol.

Moms homemade chicken does me right. In a pinch Popeyes spicy chicken will work.

I don't really care for spicy fried chicken; it makes me uber thirsty afterwards.

Frozen fried chicken is only nasty if it has those ice crystals on it when you heat it up.

I find that if you let those melt first, THEN heat the sucker up, it comes out fine.

Of course, it costs more than frying a fresh bird yourself, but there you have it.

I like me some KFC and the Boston Market rotisserie chicken on occasion. I miss Roy Rogers chicken but KFC is close enough. All the RR closed down years ago. I think there's only 1 left in Manhattan.

I prefer chicken cutlets and thighs, boneless & skinless, with a breading. I cook `em myself. They come out a little greasy but I love it. Maybe this is an Italian thing but we don't use flour at all coating chicken to take the bread crumbs. Usually we beat 3 eggs with some mozzerella or pecorino grated cheese in it and coat the chicken pieces like that. 3 eggs will do for 2 packs of thighs or 2-3 packs of cutlets. If there's any egg ;left over we mix in some leftover bread crumbs and fry that up as a bread patty as well.

I just lost 20 lbs too and I can feel the weight gain beginning just thinking about this stuff.

Yeah, Merritt Bakery has good fried chicken. I do make good fried chicken, too. But y'know, I also love to make fried turkey cutlets. They taste just like fried chicken. My older brother think they're incredible.
