I have more than a few (like many of us).
Foremost is Freaks and Geeks. My favorite series ever. Despite its cancellation I remain content with the way that it ended.
3rd Rock from the Sun was another one cancelled but given the chance to end.
Stark Raving Mad was not given a chance and suffered cancellation at about the same time the dunderheads at NBC also ended F&G.
Day by Day. A "spin-off" of (or at least in the same universse as) Family Ties. This show is probably best remembered for its Brady Bunch episode where six Brady's appear.

In this order:
1."24" Perhaps the best drama to ever air on TV. It was really disappointing to find out there's no movie.
2. "Justice League Unlimited" I can't believe this hasn't been mentioned yet. If "24" wasn't around this would've easily been my number one pick. This show recruited some major talent to voice these characters. Here are just a few:
Michael Ironside
Michael York
Edward Asner
Powers Boothe
John Rhys-Davies
Jeremy Piven
Ron Perlman
Jeffrey Combs
Not to mention some episodes were adapted from books by Alan Moore and Dave Gibbons.
WHY???? Boo!!!
3. "Firefly" I actually discovered this series after it was canceled. After watching the entire season, I had a profound sense of loss when it was over. What other shows canceled in the first season ever got their own feature film??? Which was great sci-fi by the way.
4. "Space: Above and Beyond" The show was light years ahead of its time. The budget was one of the highest in history. I honestly can't see how the modern "Battlestar Galactica" made it, but this show didn't. They're so similar. I'd say "Space" was much edgier.
