    Here are some pictures of that wonderful roast pig called lechón...it's cooked all over the world...Hawaii, Philippines, Spain, Latin America, etc...

    Lechón...one of the world's greatest foods...lol...

      That's an awesome grill, Hector!

      My parents are Uruguayan (heck the whole family is).

      My dad built our grill out back with bricks with I was a kid. Wood burning and charcoal. He did the welding himself with an oven opening large enough to cook a whole lechon spread open, at the same time.

      (Also to allow the cooking of Pizza. You haven't had pizza until it's been cooked out back in a brick oven BBQ set-up)

      He's promised to come out to where I live now with my husband and build us one.

      Still holding him to that promise, cause I can tell you this, after you've had Uruguayan BBQ, you'll never look at a grill the same way again.

      Grills sold at Home Depot are like Easy Bake Ovens. Children's toys.

      I'll look for a pic of that old grill if you want.

        Yes...I've eaten plenty of asados...thanks to my Uruguayan friend...they are the very BEST at it...Argentines too...but I think I still prefer Uruguayan asados...I think they are even bigger meats-eaters than Argentines...lol.

        I absolutely LOVE that chimichurri sauce/marinate...you grill that with some awesome thick steaks...and boy...you are in Heaven...

          chimichurri receipt from my mom:

          Fresh parsley (a bundle depending on how much you want to make)
          Fresh garlic (a couple of cloves, again depends on how much you want to make)
          olive oil
          vinegar
          salt
          Jalapeno peppers (tiny red ones) or crushed peppers (optional)

          throw parsley and garlic into a blender or food processor. Add peppers if you want to go spicy. add enough oil for it to look muddy and allow the blending process to work smoothly. Blend until it reaches the texture you want. add vinegar and salt to taste.

          Like most Uruguayan cooking, there are no strict rules. It's all very "a little of this, a little of that, taste, it's fine." Every family has their own way of making it, and no style is wrong... except for those that use cilantro. That's a crime against nature.

          I like my chimichurri, or as we call it Adobo, to be finely chopped and almost a thick consistent sauce like my mom's side of the family. My dad's side of the family prefers the "floating hand-chopped parsley in oil" style of Adobo. That's closer to the the crap you find at supermarkets trying to be passed off as Argentine Chimichurri. It's crap. Restaurants in Uruguay would probably be closed down by the government for placing some of that swill on the table

          And anyone that tries to pass off Chimichurri made with Cilantro.... is only out to hurt you, and you should back away slowly.

              Well...I'm of Mexican ancestry...so cilantro is food of the gods for us...lol.

              But I fully understand that cilantro is a no-no in chimichurri...so don't worry...I won't be adding cilantro to it.

              But for Mexican cuisine...if you don't include cilantro...they too close restaurants down there...lol.

              Thanks for the recipe...I will be making it for sure.

                              Actually easier than the typical bbq smoker or grill.

                              You crank the grill base up...don't even have to touch it.

                              Just clean using fire with a soapy water, steel wire brush, large onion...etc...
