I think the inbreeding part is overplayed a bit...for example, English King Henry VIII married Catherine of Aragon, a Spaniard...they eventually produced Mary I of England...then after her death...her half-sister took over...Elizabeth I of England.
You always find scenarios like that throughout the past English kingdoms.
Actually, the first male is heir to the throne not the oldest. Elizabeth's parents had two children both female so the line of succession fell to the oldest daughter.
If Prince Charles had an older sister, Charles would still be king since he is the first male heir. If Charles dies before Elizabeth, it Charles' first son that becomes king not Charles' next oldest brother.
I didn't know that (I did know about the 'if Charles dies, William is next in line' thing). That's interesting that the male gets preference even if a female is oldest. But if Charles had no children and died before QEII it would go to his next oldest brother.

I think it has something to do with it being under the military protection of France but I could be wrong and since France used to be a monarchy, you can't have a king underneath another king.

How come years ago there was always a King and Queen, but now it's either a King and Princess or Queen and Prince.

Someone correct me if I'm wrong but I believe it has to do with succession.
If there is a King and the oldest child is a girl then she becomes Queen when she ascends to the throne. Her husband is not a king because the King is a higher authority (and he is not of the bloodline) than a Queen so he is a prince. When a male heir ascends the throne he becomes a King and his wife is a Queen but she does not take over when he dies, she becomes Queen Mother of the new King (or Queen).
