As well as the original version with no "Episode IV" in the crawl, and the versions with various added footage (1997 special editions, 2004 DVD versions, and now the 2011 Blu Ray versions) there's also the original 1977 mono mix of Star Wars which contains some totally different sound effects from the stereo mix, alternate dialogue takes, and even a different actress dubbing the lines of Aunt Beru.

    1) Original 1977 theatrical (no "Episode IV") stereo mix
    2) Original 1977 theatrical (no "Episode IV") mono mix
    3) Original theatrical re-release ("Episode IV" added)
    4) Special Edition 1997 theatrical
    5) DVD Version 2004
    6) Blu Ray Version 2011

Empire amd Jedi had original theatrical, special edition, and then DVD and Blu ray editions.

Additionally, the assorted VHS releases throughout the 90s were remastered to various degrees, but they're not sufficiently different to be classed as variations.
And the DVD releases of the unaltered theatrical editions are taken from the Laserdisc masters.

Here's a scarier question - How many different toy lines have there been? Now THAT would take some counting.

There was, but it contains no added or variant footage, so it's just classed as another home video release, along with all the Betamax, VHS, and DVD releases over the years.

there were several (discovison, full frame, wide screen, thx widescreen)but I assume you mean the Deninitive collection release which was the same standard 77-78 theatrical re-release ("Episode IV" added) cut. But it was a clean transfer from film in the lowest compression (ie highest quality for LD 25 minutes a side). And it has some making of specials that have not been released on dvd
