Another favorite of Mine is "Road to Perdition"! Tom Hanks is great in it, as well as Paul Newman. Who would've thought Hanks could play a sympathic Hitman for the Mob? I consider it, an instant classic.
Honorable mention: Casino, The Public Enemy, A Bronx' Tale, Jackie Brown, The Untouchables, American Me, The Departed, King of New York, Once Upon A Time In America, New Jack City, The Sting, State of Grace, and Godfather 1.
I forgot what a great movie American Me is. It's gotten kind of obscure and deserves way more attention than it gets.
The Godfather 1 & 2 are classics indeed, but are way too romanticized.
Casino could have been near the top had it not been for Sharon Stone's character, I'm sorry, I hated her performance, all she does is kick and scream, shout, and just behave like a major *****, and the worst part is that she's a major character and is in half the bloody movie...she blows the movie for me...too bad because the scenes between Robert DeNiro and Joe Pesci are awesome, and the ending is one of the greats, lol.
I will also including non-Italian gangster films on my list:
