I live in Las Vegas, and I love Rogue Toys. They have a location on Las Vegas Blvd, about a block north of Pawn Stars. It's a tiny store but it's packed full of vintage toys of all types. It could be a fun thing to do with your family. You could go to Pawn Stars for the as-seen-on-TV touristy thing, then walk over to Rogue Toys to get your toy fix. From there you're really close to the Fremont Street Experience, where you could have dinner, see a free concert, and watch the light show.

Start off with a Martini at
Musso and Frank
Serving the best Martini's since 1919. If it was good enough for Bukowski, it's good enough for you.
Then a short drive over to
Meltdown Comics
for some comics and collectibles
All that shopping will make you hungry. Hop on the 10 West and get to
Moon Shadows
where you can party like Mad Max (just don't drive or run your mouth like Mad Max), watch dolphins and enjoy a beautiful sunset

So far, all of your suggestions have been added to the trip.
I love it when a plan comes together....
