    I have made my own chili w/ ground beef, kidney beans, onions and various spices. These days I cheat and buy it canned. For awhile Hormel (I think it was Hormel) made an excellent white chicken chili, but I haven't been able to find it in my area. But I MUST have it w/ rice. That's how I grew up eating it, and it's so good!

        I make my own chili and subscribe to the school of thought that "all chili must have beer in it." The ratios change, depending on my mood, but for the most part, these will go into it:

        Ground beef
        Onion
        Garlic
        Bottle of beer
        Crushed tomatoes
        Can of black beans or kidney beans, depending on what's in the cupboard, rinsed
        Diced green chilies
        Chili powder
        Cumin
        Adobo seasonings
        Ground mustard

        Cook the ground beef with onions and garlic. Drain the fat. Sprinkle the meat mixture with a bit of chili powder, cumin, and adobo seasonings and cook for another 2 minutes or so. Add bottle of beer and cook for a minute or two. Add big can of crushed tomatoes. Add chilies. Add more chili powder, cumin, adobo, along with some ground mustard. Bring to a boil and reduce heat to simmer check seasonings and adjust. About 20 minutes before you're ready to eat it, add the beans. I find that if I add the beans too early and simmer them, they break down too much for my liking. I prefer a bit of texture still with my beans. After 20 minutes on simmer, the beans should be plenty warm and still plenty firm. Serve with diced onion/cheese/sour cream/whatever.

              I use chocolate, but one square of good unsweetened baking chocolate per batch.

                  I made this yesterday...it's NOT Tex Mex chili...it's a Mexican dish, frijoles de la olla con chorizo...which basically translates to baked beans with chorizo (I boiled the raw beans with sea salt, black pepper, onions, garlic, paprika, and bay leaves). Served on a bowl...some salsa and sour cream on top...and crumbled tortilla chips...Mmm, delicious...had me two bowls, ha...




                  I swear, that's a pillow under the bowl, not my belly...

                    Earlier in the week I made chili using Bush's chili starter w/ beans. I used a pound of lean ground beef and a can of tomatoes, and kicked it up w/ cayenne and ancho powder. It was passable, but not great, served on rice w/ chopped onion.

                            I make it vegetarian, and add the hottest peppers in the world. Lots of different kinds of beans and several kinds of super hot peppers. Nobody but me likes it. They say it's "too hot", but that's how I like it. Spicy!!

                              The only prob with that, if you're always going for a capsaicin high you're sacrificing flavor.

                              That's why I always think people that love super-hot food could eat hot sauce on anything an not know the difference.

                                Heres my Chili recipe.

                                2lbs buffalo ground, or lean beef. (buffalo is best)
                                3-4 steak cutlets cut into 1 inch squares.
                                3 jalapenos seeded
                                1 bell pepper seeded
                                1 small onion diced (white).
                                1 can chili beans
                                1 can kidney beans rinsed
                                1 28 oz can crushed tomatos
                                2 cans beef broth
                                1 table spoon crushed garlic.
                                2 tsp ground cumin
                                1/3 cup fresh red chili powder medium
                                1/4 cup parsley

                                brown the meat first, add the rest cook for 90 min. add 1 cup of shredded cheddar cheese before serving. BOOM!
