Yeah, have made those two, but instead of ground sausage, I use chorizo, yum.
You obviously know your stuff! You are my kinda person! Invite me to your house, lol.
Have you ever had enchiladas de pollo con mole?
Holy Jesus, double yum!
There's another awesome Mexican egg breakfast, Huevos a la Oaxaquena, evil good, lol.Leave a comment:

They are delicious.
Easy to make.
Pan fry a couple of tortillas over very little oil (I use olive oil).
But don't over toast them, ofherwise they will turn into tostadas, lol.
Two fried eggs, sunny side up or over easy.
Place the tortillas on a plate, then top it with the eggs, then add shredded cheese of your choice, and top it all with salsa.
You can add a touch of sour cream on top if you desire.
Refried beans/rice goes great as a side dish with Huevos Rancheros as well.
Delicious!
fry up a tortilla(fresh maza and water is the best way)in some olive oil.
throw it in the encillada sauce and drown it for a second
put on plate add green onion, shredded cheese(mexican blend) and ground sausage
do this again for a second or third layer depending on how fat you want to get
Why you fry up an egg throw the plate with layers in the microwave for a min to melt cheese
Fry and egg or two up and throw it on the top
cover with tater tots or fresh homestyle potatos (homestyle taste better but tots get nice an crunchy)
then pour remaining encilada sauce over the whole thing
Most amazing thing I've ever had in my life.
Oh yeah and if you want to get fancy fry up a jalapeno and cut some fresh avacado and add fresh cilentro to it also. That the icing on the cake.Leave a comment:

Given the choice between Mexican, Italian or Chinese, I'd pick Thai every time.Leave a comment:
