    No, I'm was born a dumb southern white boy, haha but I'm willing to learn, details please. I know Mole souce and it's amazing. I'm recently discovering all kinds of amazing mexican dishes. I could eat a terd rolled up in a Tortillia with Green Chilis and Cheese that's how good Fresh Roasted Hach Green Chilis are. Thank goodness I moved to Colorado or I would have never gotten the pleasure of a Green Chili.

    I take this to the extreme. I guess they are called enciladas montadas.

    fry up a tortilla(fresh maza and water is the best way)in some olive oil.
    throw it in the encillada sauce and drown it for a second
    put on plate add green onion, shredded cheese(mexican blend) and ground sausage
    do this again for a second or third layer depending on how fat you want to get
    Why you fry up an egg throw the plate with layers in the microwave for a min to melt cheese
    Fry and egg or two up and throw it on the top
    cover with tater tots or fresh homestyle potatos (homestyle taste better but tots get nice an crunchy)
    then pour remaining encilada sauce over the whole thing
    Most amazing thing I've ever had in my life.
    Oh yeah and if you want to get fancy fry up a jalapeno and cut some fresh avacado and add fresh cilentro to it also. That the icing on the cake.

    Damn, now I'm starvin! I grew up in Nebraska and there are a ton of Mom and Pop Mexican restaurants. Every one of them is fantastic. I'm such a Mexican food snob, I can't help it!

    So first for me is Mexican...REAL Mexican.
