In memory of my mom...

Hi guys!

So it's always been a tradition in my family to have black beans and rice for a prosperous New Year. But since my mom died, I've been too chicken to attempt to make them from scratch, (I've used canned beans). But this year, I have the beans soaking in the kitchen and tomorrow, I make some good ole' black beans and rice. I hope I can do it justice.

You'll do fine. My Mom and Aunt went through the same thing when my Grandmother died. She never used a measuring cup, never varied from the companies of the few things she didn't make from scratch, and heaven forbid you tried to use something like a jar sauce in her Italian dishes. Even stuff like her lasagna, she had to make the meat as meatballs first and cook them in sauce, and then she broke them up and made the lasagna. We'd get spaghetti and meatballs for lunch and then lasagna for supper. In between she'd make home made pizzas. And that's why we're all still fat, but 22 years later we still enjoy the same tastes we did when I was a kid thanks to them. My Va-Vo was unbelievable. I can remember stopping at her house one night to use the bathroom at like 10PM and by the time I came out my buddies were already sitting at the table and she was whipping up for food for us. OK now I'm getting emotional. Best of luck with the Beans and rice.
