Anybody have a good pickled egg recipe ?

    Anybody have a good pickled egg recipe ?

    I miss pickled eggs

    I know they're all over the internet but i'd rather get one from you guys

    Preferably the red beet kind

    It's funny you mentioned the beet kind, because I just chucked half a jar in the trash last night. They're great, but I just kind of forgot I had them and think I might have been sitting on them too long. I think this is a good recipe, but make sure to cut the end off an onion and stick it in the top of the jar before you seal it. I think that gives it some extra zing.

        I just made a batch last night oddly enough. My method is pretty simple. I use a pickle jar (with left over pickle juice). I boil eggs, put them in cool water for a few minutes. Then put them in the jar and top up the jar with white vinegar.

        Once it's in the fridge, I don't touch them for 2 days. YUM

              Boiled eggs stored in vinegar/brine, like dill pickles. Here is the Wikipedia entry. They can be pretty strong vinegar-wise, but I like them a bit milder where they just taste like boiled eggs with a bit of zing. The beet ones we're talking about are actually kind of sweet, being made with beet juice, and take on the purplish color of the beets. Also, they stay good for ages--you can have a jar for four months and not even worry about eating them.
