                Flautas (which translates to flutes) are an often overlooked Mexican item...basically a fried rolled up taco...very easy to make...and people go crazy for them.

                Just microwave some corn tortillas...so they can soften up...and can be rolled up easily. Fill them up with shredded leftover turkey (and even stuffing and mashed potatoes). You can secure them with a toothpick...but I don't...I have mastered the art of frying them rolled up without assistance...lol.

                Fry on regular olive oil (extra virgin olive oil burns too easily)...don't drown them on oil...just enough to brown bottom...and just keep turning them over until brown and crunchy...then placed on paper toll to rid of extra oil on the surface of the flautas...then put anything you want over them...salsa, sour cream, avocado...whatever...there's no limit...and enjoy...
















                You can also use turkey leftovers for other Mexican items...such as more traditional fried crunchy tacos, turkey mole poblano, and even turkey birria...

                        Oh Hec good stuff, I suppose a sort of Mexican spring roll LOL. I always think its crazy that we all enjoy these seasonal dishes, but we never make them during the rest of the year , just doesnt make much sense to me.

                            I love sauerkraut which my family always serves as a sidedish with Thanksgiving or Christmas dinner. I guess it is one of those things that we grew up with and rarely ate it outside of those two holidays but always enjoy it.

                              Thanks for the details on Fluatas. I've eaten them in restaurants before but never attempted them at home. But this Friday I will be eating Fluatas prior to the kickoff of the Arkansas-LSU football game. If you have any hints on how to prepare rice like in your photos I would love to read them.

                                Back in the day we used to not only have turkey but also kielbasa, kishka, perogies and other Polish food on Thanksgiving AND Christmas

                                Today it's just the American stuff (turkey etc)

                                I miss the Polish food
