The real authentic Philly cheesesteak is made with rib-eye steak (the best and most flavorful cut of meat).
Just request a boneless rib-eye steak (you can get a cut small enough for one sandwich, which won't brake your bank)...have the butcher thinly slice it for Philly cheese steak purposes (or if you have a real sharp knife, you can thin-slice it yourself)...and presto...pure authentic awesomeness.
