          From a Beatles fan perspective:

Elton John "Lucy In The Sky With Diamonds"
Earth Wind and Fire "Got To Get You Into My Life"
          Fionna Apple "Across The Universe"
          Rufus Wainwright "Across The Universe"
Wes Montgomery "A Day In The Life"
The Smithereens...the whole "Meet The Smithereens" CD

          Solo Beatle covers:
          Shawn Mullins "What Is Life"
          Jellyfish "Let 'Em In"

Can't stand G'n'R's cover of "Live and Let Die"

          Other covers I like:

Metallica "Turn The Page" (Bob Seger)
10,000 Maniacs "Because The Night" (Originally written by Springsteen...made famous by Patty Smith)
          U2 "Dancing Barefoot" (Patty Smith)
          Adelle "Love Song" (The Cure)
Adelle "To Make You Feel My Love" (Written by Dylan...Billy Joel made it a hit)
          Garth Brooks "Shameless" (Billy Joel)
Nilson and Mariah Carey "Without You" (Written and released 1st by Badfinger)
Johnny Cash "Personal Jesus" (Depeche Mode)
Martina McBride "I Never Promised You A Rose Garden" (Lynn Anderson)
Susanna Hoffs "To Sir With Love" (Lulu)
Susanna Hoffs "Stuck In The Middle With You" (Stealers Wheel)
Susanna Hoffs and Matthew Sweet's "Under The Covers" CD
Joan Osbourne's "How Sweet It Is" Covers CD
Melissa Etheridge "Maggie May" (Rod Stewart)
Melissa Etheridge "Me and Bobby McGee" (Janis Joplin)
Eric Clapton's "From The Cradle" CD

I know there's a whole bunch more that I am forgetting...these are just a few off the top of my head, and in my Music/LP/CD collection.

BTW, I can't stand The Cure...but I actually did like the original version of Love Song....Here's Adele's Letterman appearance:
          http://www.youtube.com/watch?v=RHxDX5L4Az4

Part of the same Letterman Post show concerts "To Make You Feel My Love" :

          http://www.youtube.com/watch?v=m0fKz_qrQbI

There's a reason why Adele won Best New Artist a few years agon at the Grammy's...such a INCREDIBLE voice.

I can't believe I forgot a cover by one of my favorite artists...Not a big fan of Jethro Tull...but I love this version of Living In The Past by Midge Ure:

I like rocking the house with Carry On Wayward Son and a Beatles' medley of songs we put together (Based on Type o' Negative)...always two ways to get a crowd into things.

I forgot the nam of the band (and I'm a bit lazy at the moment) but n the "Clerks" soundtrack their were two great covers. One was Fleetwood Mac's "go your own way". and "shooting star" by Bad Company.

Ok got a little not so lazy:
Seaweed did "Go your own way"
                    Golden Smog did "Shooting Star"

You are a bold and courageous person, afraid of nothing. High on a hill top near your home, there stands a dilapidated old mansion. Some say the place is haunted, but you don't believe in such myths. One dark and stormy night, a light appears in the topmost window in the tower of the old house. You decide to investigate... and you never return...

Anything by The Smithereens is great--one of the best, most underrated bands of all time. Pat DiNizio's songwriting is phenomenal. Also, keeping w/ your post on Beatles covers, Stanley Jordan's "Eleanor Rigby" is a little slice of genius.

First 3 LP's by Stanley Jordan are just AMAZING. Let's not forget his cover of Stairway To Heaven:

Then there is his whole Standards LP. Had the pleasure of seeing Stanley Jordan up close at the Blue Note in Manhattan during his Flying Home Tour. AMAZING is the only way to describe what he can do.
