Stuffing is probably my favorite holiday food. My husband's family has always made something called potato filling. I don't know the recipe, but it involes mashed potatoes, bread cubes, and egg yolk. When we eat with them, there's usually some of that or some fresh stuffing from Karns, which is actually very good for store-bought. My mom always makes the traditional stuffing inside the bird, which is still my favorite. My aunt(who takes turns hosting holiday dinners with my mom) tends to go a little crazy when making food. There's traditional stuffing in the bird, some made from the same ingredients, but oven-baked in a pan, and at least one variation - it will have little sausages, or fruit of some kind mixed it. I usually don't go for those.

Curse it, my wife dropped the ball this year. I made the turkey - half smoked & half traditional - along with scratch mashed potatoes, asparagus and canned gravy. I warmed up the dinner rolls & popped a frozen pie in the oven.

"OK, Honey." says I, "You can start the stuffing whenever, and we'll be ready to eat."

"Oh, did you buy stuffing?" she responds. Well, no - I didn't buy stuffing. She always does the stuffing. So...I didn't get to eat any stuffing with my Thanksgiving dinner.

However, I hit Kroger this morning and picked up a box of Stove Top. When I have my leftovers, and I will have my leftovers, they'll be accompanied by fresh stuffing.

          The end.

I love stuffing - just seeing this thread makes me wish I was going States side this weekend for a Thanksgiving dinner. How awesome would 2 Thanksgivings a year be?

So yous don't actually put stuffing inside your turkey ?
Heck no...I heat the stuffing separately.

I place a white onion, apple, celery, and carrots inside (and under the turkey rack) to add flavoring...then remove that before serving.

You de bone the turkey necks...then minced the meat really good....and mix it into the stuffing...it's fantastic.

Home made, by me. I use lots of onion, celery and beleive it or notn eggplant. The eggplant really add something. I also use wheat bread.

I never eat stuffing. If I do eat it, it will be less than a teaspoonful. Don't touch that stuff and don't want it on my plate.
