It's not so much his mask was of an old man, but as an old Caucasian man.

Getting out of China he needed to look non Asian and going Caucasian was the way to go ... He used an old looking mask because it would be harder for Chinese security guards to notice if it was real or not.

Of course once he landed in a Caucasian country the guards spotted it quick.

Hong Kong was actually pretty Caucasian last I was there.
