But on the pork ribs...I'd have to slightly disagree...you gotta have the bone...the marrow inside the bone gives it an extra unique flavor...and the secret as you know...is how to cook them right (marinating, rubbing, heat, duration, etc...)...it does take a certain art in cooking ribs correctly.
I've seen people massacre meats without any bone...and come out like beef jerky...
