    Got a hickory smoked turkey in the fridge for the 10th year in a row...3 hours of gentle warming and it is the most flavorful turkey I ever had. Stovetop on the side. Add in 4 sliced boiled eggs....some minced onion...minced garlic...some parsnips...

    Our turkey gets stuffed, but not traditionally. The Stuffing consists of Bacon, which gets browned and removed from pan. Butter and dried bread cubes get added to the pan to soak up the Bacon goodness. They are transferred to a bowl that includes Breakfast Sausage, Minced Pork Spare Rib, onions, an egg, herbs and some chicken stock. So this crazy stuffing gets squeezed in between the skin and the white meat section. This makes for a steroid lookin' bird,


    So when the bird is done, the section with the Stuffing is cut out, including the Turkey skin, and served as a side.

    When I was married in the 80s, my ex used to stuff the bird and he used cheesecloth. These days, I celebrate alone and buy turkey cutlets, cut them into strips, and prepare them like fried chicken, and serve w/ turkey gravy. And my own definition: if it's homemade, it dressing, if it's boxed (like Stove Top) it's stuffing. (it says so right on the box). I prefer Stove Top.

    (This was Thanksgiving dinner in 2015 when my brother came out, so you can see the fried turkey strips. He had 3 helpings of everything!)

    Yes, I stuff the turkey ... in my mouth!
    For the last 20 years or so, I've deep fried the turkey, so stuffing the bird is not an option. Only thing different this year (and last) is that I broke down and bought an indoor turkey fryer. Soooooo much better than the old outdoor method, easier to control the temperature, easier to clean up. I love it! And I use it to make deep fried chicken tenders occasionally as well.
