I am going to have to try your marinade Sherri. I "oven fry" chicken too. Right now, I use boneless breasts that have been marinated in a honey mustard marinade which I get from the store and use shake and bake crispy. But I spray Pam on the chicken and coat and repeat a couple times.

Oops...I think you mixed my post up w/ someone else, Michael. I don't marinate, and I don't oven fry. I use an egg wash (egg and water), Italian bread crumbs and flour, spices. Geez, I'm making myself hungry. And please, sweetie...my name is spelled Sharry.

I found some of my fried chicken pics amongst my thousands of photos, lol...

This was made with simple flour, egg batter, and spices...I used canola oil for this one...

...and this one I used mustard powder as the central spice (no egg batter)...cooked in peanut oil...it came out delicious...

On the 8th, I had fried chicken for the first time in DECADES, when we had KFC at my sister's house. It was alright, but I cannot say I am in a hurry to have fried chicken any time soon.

I prefer homemade. Whether I make it or someone else does. When I make it, it's simple just chicken, eggs, flour, salt, pepper and canola oil.

Of course, some proper restaraunts make very good southern fried chicken.

I used to love Kentucky Fried Chicken (hate that it's now known as KFC) and Famous Recipe (a franchise that used to be popular in the lower mid-west and upper south), but both seemed to have really gone down-hill in the past 3 decades, in my opinion.

Found this one recipe that used Kellog's Corn Flakes crushed up fine as the coating. You rinse the chicken in cold water, dip in egg and then shake it in a bag that is filled with the Corn Flakes.

Then, bake for 50 minutes under the broiler in an aluminum foil lined pan.

Talk about crunchy! I did that once, and crushed the Corn Flakes the hard way; with a fork in a large Tupperware bowl.

Just make sure you poke the chicken with a fork to let some of the juices out, otherwise it doesn't cook evenly.

I'm making myself hungry for it, but the good news is, we're having it for dinner tomorrow!!!
