Man...the only other state in the USA that can match California in Mex food is indeed Texas...

Some of the goodies I've made...

    Chicken flautas:

    Tostadas de ceviche:

    Salsa avocado:

Sopaipillas (fried flour tortilla chips with sprinkled cinnamon and sugar):

    Quesadilla with Oaxaca cheese:

    Mole poblano de pollo:

    Carnitas:

    Birria (goat):

Hell...I'll even make you Taco Bell tacos better than Taco Bell...lol:

...and if you get sick of my Mexican fare...I'll even make you some delicious Chinese shrimp fried rice:

    Oaxaca cheese quesadillas... ^ ^ ^ ^ ^

I prefer mole poblano over the verde though...just a natural preference.

Oh...and I've made cochinita pibil...delicious...but I have to take it easy on the habaneros...

my fav taco's are---cochinita pebil..tacos de lengua..pollo molle verde...suadero....etc etc...Taco Bell for me...NADA...not even close to the real thing...also the cheese most places use..blah..try a Taco or Quesadiila with real Oaxaca cheese..oh my....
Hard to find a good Taco franchise lately...Taco trucks are the closet thing to the real thing..

    Jason,

That one was good. I agree. If you are ever in that neck of the woods I recommend El Asadero on Rainer El Asadero
Also I recommend this place La Fondita 2 in White Center/West Seattle.

If you want some Aztec cooking I recommend Tenoch Mexican Grill up on Queen Anne.
Gourmet Real Mexican food try Galerias up on Cap Hill on Broadway.
Real core Mexican food try Senor Moose in Ballard.
Some southern Mexican cooking try El Quetzal up on Beacon Hill on Beacon Ave S. The Tortas are amazing I'm fond of the sauteed Cactus one myself.

Well, mine had guacamole...and they were to go...so they kinda crunched together on the trip back home.

But Taco el Gordo got the same treatment...yet they folded out neatly...less messy in form.
