What's your fav kind of cheesesteak meat?

    A real Philly Cheesesteak is made from Frozen Ribeye, sliced thinly with a deli slicer, and chopped on a flat grill. That being said, I always have some Steakums in the freezer.

    And I substitute Mozzarella for provolone, but wither is better than "Wiz". Sauteed Vidalia Onions completes the homemade version for me, with a dash of celery salt.

    You're thinking of Geno's and Pat's as the dueling places in Philly. I think they're both kind of "meh" as far as their steaks are preferred. I always found that the smaller, out of the way, places had better cheese steaks.

    Oh, and you can really only have them with chopped steak. Any other way is an abomination.

    The bigger question is whether you want provolone or Cheez Whiz and whether you want them "wit" (onions).

    I know this makes me a heretic, but I always liked mine as a provolone "wit." But, I'd also add mayo, sweet peppers, and pepperoni. It was a great balance of sweet, salty, and savory in a sandwich.

    I'm trying to remember their names, but in Philly a couple of years ago I got to try out cheese-steaks from both of the dueling places across the street from each other. Wish I had written down which one I prefer.

    Usually there's 3 kinds of ways you can get a cheesesteak

    1. chopped steak

    2. unchopped fillet

    3. Steak-ums style

    Which do you prefer ?

    Given the choice, I like Steak-ums best on a cheesesteak

    what about you ?
