    Tell me about your turkey gravy

    Mine is …

    Flour + Land-O-Lakes + Country Crock + water --- roux

    strained turkey drippings (from breast only cut)

    Collegeville turkey broth


    It comes out nice but isn't great …. Any pointers ?

    My gravy and dressing are AWESOME if I may say so.

    Pan drippings into roux, deglazed browned bits with broth. Salt, pepper, dried thyme and a dash of smoked paprika. Minced neck and gizzard meat stirred in and right before serving, I whisk in a pat of butter or a shot of the warm cream I use in the mashed potatoes.

    The broth I use comes from slow-simmering the giblets (sans liver) while the turkey roasts. The liver I panfry right away and eat myself--it's good to be the cook.

      I usually just get a container of Plainville Farms turkey gravy.

        For the gravy, just the standard Drippings, Flour and Milk, but tonight we're goin' Ina Garten and adding some Cognac. Look out!
