Pork Belly of the gods!

    Pork Belly of the gods!

    This Ambrosia cannot be eaten by us mortals, for the flavors are so intense, one's head will explode like the guy from Scanners.

    We start with the 9 lb. hero of the meal



    The Rub



    The Sauce



    Wood Chips



    The Pork Belly is cut into 2" X 2" squares



    Then the Rub is added



    Wood Chips get put in place





    Indirect heat at 300° the entire time



    After 2 hours, the Pork Belly gets sprinkled with Brown Sugar and butter, then foil-covered in a tinfoil pan





    After 1 1/2 hours, the cover is removed and the Pork Belly gets the Sauce and cooks uncovered for another 15 minutes to get a nice glaze

    -Done-



    Served with 2 sides: Brussel Sprouts w/ Pancetta



    and Bourbon Bacon Beans

    Holy mother of gawd........

    You GOTTA ship me some of that packed with dry ice!!!!!

    Definitely one of the tastiest things you can eat...it’s so delicious...

          OK, messy Thor is freaking me out a bit, but the food looks soooo delicious that I'm getting over it. Love your food posts!

            These sequential culinary adventures are better then most of the programming on the Food & Cooking Networks.
