    Anyone ever made a Cassoulet before?

    We never have, but my Wife has been wanting to make one ever since we tried it in some hipster restaurant in Portland (what a fun town). It's been raining all week in Pasadena, so we decided it was time.

    Got the Tarbais beans soaking last night. This morning we got the party started at 11:30 a.m.

    The pork is strong with this meal; 2 types of pork sausage in the mix.



    Then the ham hocks start doing their thing.







    Getting the duck confit ready.



    OK, got everything together. Now it gets covered with breadcrumbs and cooks for another hour (7:15 p.m.) Then it's time to eat like a French peasant.

    Mmmm. I love those one-pot French dishes. I've had bouillabaisse, bouef bourguignon, and even made my own coq au vin, but never had a cassoulet. Yours looks delicious.

    I did not realize it included confit. I've had duck confit as a separate dish, it's wonderful.

      That looks amazingly good! It would really hit the spot in the parts of the country where it’s cold and snowy, as well. Very hearty.

        I'm wondering if I could make this with more modest ingredients, like chicken legs and smoked artisan sausage.

            You're rockin' that dish!… and pretty much all French peasant food (with proper technique ) is delicious. PDX is a hellvu food town… never seen another US city devote so much valuable real estate to food stands; remarkable.

            I haven't taken on a full cassoulet yet, but Pepin tells me I should. My lost friend Istvan used to cook the most amazing Hungarian, Dutch and Spanish meals for me. Every time he'd utter in one of seven languages, "ah is nothing, just peasant food." Your post trigger those sweet memories for me, thank you and enjoy your meal.
