I use both. although primarily propane for convenience sake. however, invariably when we are having a party, the propane side has a grease fire and I end up having to move over to the charcoal side
I'm a propane convert for the last nearly 20 years. So much easier to control temperature. I still do charcoal sometimes for large parties, like the annual community 4th of July party where we cook for about 200 people or so. But, given my druthers, I'd rather work on a propane grill, especially when I'm just cooking for myself, the better half, and the kid.
Propane is, of course, faster and the temperatures easier to control, but I'm with Hector that big, red-glowing embers of wood give you the BEST flavor. Hickory, beechwood, applewood, mesquite---they're all excellent and will maintain heat for quite a while while providing your food and your taste buds flavors sensations not achievable with propane or lighter fluid and charcoal.
