So, I've noticed the Hulk and Thing, and perhaps others too, can't twist their hands like the other characters. Was this a design stumbling block? or is there something about their big crushing fist hands that makes it important to keep in one position? and finally, has anyone repro'd the fist hands so that they CAN twist and reposition and do more cool stuff?

I can only assume this was a cost-cutting measure. Making the fist part of the forearm would cut down on the number of pieces necessary and shorten production time. This is only a guess, but it makes sense.
I do believe I've seen some customs, but you may want to post that question over in customs. The great people there can do almost anything.

Hulk arms have been repro'd, but not with a moving wrist I believe

the lizard is also a figure without a movingw rist well t-1 are anyways t-2 has movable wrists.
